Cookery courses
The cookery courses are held in the 12th Century tower in a room specially equipped for the purpose.
Salentine cuisine is rich in greens, pulses and wheat-based food (pasta, bread, focaccia, etc.), all accompanied by extra virgin olive oil. It is typical Mediterranean cuisine, highly recommended for a healthy diet.
You will get hands-on experience as you learn traditional Salentine culinary arts, preparing:
- antipasti - fish or vegetables preserved in oil, pittule, crochette, etc.
- home-made pasta (oreccchiette, minchiarieddhi, sagne ncannulate, ciciri e tria)
- bread and focacce
- main dishes - meat balls and the local speciality pezzetti, etc.
- greens - seasonal vegetables and weeds
- sweets and biscuits
Knowing a people's tastes and flavours also means getting to know their traditions and customs and thus being enriched by your visit to the Salento.
